The brief
Not the bar at midnight — the bar at six, when the wood is wet, the glasses are cold and nobody has arrived. Bright and dark at once, which is a hard pair of instructions.
A bar counter being wiped down
Citrus peel, damp wood and a trace of tobacco. The half hour before a room fills up.

How it was made
01
Not the bar at midnight — the bar at six, when the wood is wet, the glasses are cold and nobody has arrived. Bright and dark at once, which is a hard pair of instructions.
02
Bitter orange rather than sweet gives the opening its edge, and it is held up longer than citrus usually survives by a juniper CO2 that shares the same volatile band. The wet oak is a birch tar fraction diluted to a tenth of the level that would read as smoke.
03
Bright for forty minutes, then it turns and stays turned — wood and a faint sweetness of tobacco leaf that never becomes a cigar.

Sharp enough for the morning, warm enough for the evening. The only one of theirs I have finished.
Five hours and it is gone. They say so on the page, so I cannot complain, and I keep the bottle in my bag.
